You’ll either arrive at the G or A gate. Easier to walk to your next flight. Yes, you have to collect your baggage and then recheck it in.
Re: Terminal 1 to Terminal 3 at SFO. The fastest way is probably to take the Airtrain that circles the airport. SFO is laid out in a loop, so you can also walk if you have the the time and want to stretch your legs. Maybe 15 minutes to walk between Terminals 1 and 3. 2.
My experience is that is comes every 5 to 10 minutes and it may only be a 5 minute ride between terminals if you go the correct direction. I'm not really sure if it's certain to save you any time over walking between terminals. Plus you have a 5-10 minutes walking from your gate to get out of the terminal you fly into.

You can take the Air Train, walk upstairs, wait on an outside shelter (kinda colder, it's kinda a welcome to the City) and two stops to Terminal 1, walk down the stairs and she would have to wait outside the security area.
