You can park at the airport lots, private lots, BART lots, park/stay/fly hotels, etc. But again, no one can guarantee that your car will be safe anywhere.
There are one-way surcharges. It's not too bad on the way up, about $125. The way back is about $225 or more. Still, that's the same price I'd pay for parking. I'd probably just need to account for an extra half hour of time getting to my flight, and I'd be at the mercy of the shuttle.
I travel via SFO several times a year, and have stayed at at least dozen SFO-area hotels. I love the convenience of Park-Sleep-Fly packages, and they're not that much more expensive than long-term parking at SFO. Although rates vary, I find that more than half of the time I end up picking this hotel for the package, and am happy when I can.

The Value long term lot will run about $85 per week less any CAA discount. Parking here is secure as well. Free skytrain to the airport (5 minute ride) Some Richmond hotels offer a stay one night and get free parking for a week deals but their lots are open so no security.
Nearby Anza Parking offers $11.75 / day parking with a free shuttle. That alone will save you $100 over the SFO parking, which is $18 / day. I have no idea about nearby hotels offering up their lots.
