I've experienced AMtrak yield mgmt. Currently the fare is at the low end ($1,100) and I know it'll go up to close to $2,000. The sleeper sale, if there is one, will apply to the free 2nd pax which seems to be anywhere from $150-300 (fare appear to be ~$220 pp based on how much the room is going for).
The Visitor's center has coupon booklets and they contain a coupon for $2 off each up to 5 tickets. I've never seen discount coupons anywhere else. Later in the afternoon the rates do not change. It is one price all day.
